The Vegan Pad Thai is very simple to make and it's so delicious!

Even though this site is about vegan clothes, I also want to share some of the best vegan recipes that I have cooked at home. These are simple and easy meals that you can prepare at home - for yourself and all your vegan and non-vegan friends! :-)






What you need:

1 cup of water, plus more for soaking the noodles

1 10-oz. package rice noodles

2 Tbsp. Olive Oil

2 cloves garlic, chopped

1 package extra-firm tofu, drained and cut into chunks

5 Tbsp. soy sauce

2 Tbsp. peanut butter

Juice of 2 limes

3 Tbsp. sugar

2 Tbsp. Sriracha (to taste)

Sliced green onions, for garnish

Chopped peanuts, for garnish

1 Tsp Chili Flakes (optional)


1. Bring a large pot of water to a boil. Carefully submerge the rice noodles in the water, turn off the heat and let soak for 15 minutes.

2. In a large frying pan, heat the olive oil over medium heat and add the chopped garlic and tofu chunks. Drizzle 2 tablespoon of the soy sauce over the tofu and sauté until golden brown.

3. In a small pot, over medium heat, whisk together the peanut butter, lime juice, sugar, Sriracha, 3 Tbsp. soy sauce and 1 cup of water.

4. Add the soaked noodles and peanut butter mixture to the tofu and cook through for about 5 minutes.

5. Garnish with sliced green onions and chopped peanuts and serve right away.
